Directions
Preheat the oven to 300 degrees F. Line cookie sheets with parchment paper.
In a small bowl, mash ripe banana, peanut butter and egg until completely combined and smooth. You can use an electric mixer if you have one, but it's not necessary
In a large bowl, mix the flour and flax seed. Add the wet and dry ingredients together until the dough comes together.
This dough is going to be tougher than others you may have baked with before. Set parchment paper on the counter to roll the dough out onto. Place a fist-sized ball of dough in the center of the parchment paper. Fold the paper the edges meet and completely cover the dough. Roll the dough over the paper to a 1/2- to 1/4-inch thickness and cut out the cookies using a cookie cutter of choice. Transfer the cookies to a parchment-lined baking sheet.
Bake cookies for 15-20 minutes or until golden brown. Chickpea flour treats don't take long to cook, so check in on them every 5 minutes.
Cool treats on cooling rack for 2 hours to harden.
Store in fridge or freezer in airtight container.
Recipe Note
If this is your first time working with chickpea flour, you'll find it tougher to work with than regular flour. As well, it gives off a savory scent, but that doesn't put off dogs one bit!
