Directions
Preheat oven to 375°F. Line cookie sheets with parchment paper.
- Place oats in food processor or blender until chopped into fine pieces.
- In large bowl, combine flour, mint, parsley, cinnamon, Perfect Form, ground flaxseeds and chopped oats.
- Add egg and water to the bowl and mix well.
- Knead with hands to form dough. Add more water or flour as needed.
- Roll out dough onto floured surface to ¼ inch thickness. Cut with cookie cutters and place on cookie sheets.
- Place cookie sheets in oven and bake for 15 minutes.
- Remove cookies from oven and let cool on rack for 1-2 hours.
- Store in air tight containers, and keep in fridge or freezer until needed.
Recipe Note
If you don’t have fresh mint or parsley on hand, using the dried herbs as a substitute will work as well (my preference is to use fresh when I can).
